鱼香肉丝的菜谱:鱼香肉丝
材料
主料:大腱子肉1块
配料:茭白、黑木耳、青椒、红椒
调料:郫县豆瓣辣酱1汤勺、泡椒少许、香葱2根、生姜2、3片、蒜瓣3个、食盐1/2茶勺、料酒1汤勺、生抽2汤勺、白糖1/2汤勺、醋1/2汤勺、玉米淀粉1.5汤勺、水淀粉适量、鸡精适量
做法
1、锅中烧热适量油,油6成热时下入肉丝炒散至变色立刻关火捞出(用筷子轻轻拨散肉丝,这样肉丝很完整,不会断不会碎)。
2、锅中余油烧热,下入切好的姜末、蒜末、葱白末煸出香味。
3、下入泡椒和郫县豆瓣辣酱炒出红油。
4、下入刚才炒变色的肉丝,翻拌均匀。
5、接着下入断生的茭白丝和黑木耳丝,并调入刚才混合好的料汁,翻拌均匀。
6、再下入青、红辣椒丝翻炒均匀。
7、最后用适量水淀粉勾薄芡,关火调入少许鸡精、撒葱花出锅即可。

1.肉丝:顺着猪肉的纹理,切成肉丝。取一个碗加2大汤匙的水、2茶匙的酱油、1茶匙糖、1/2的淀粉,把肉丝放入碗里,按摩下,加入少许油,继续按摩,腌一下。
2.起个锅子,加入少许油,油温5成时,下肉丝炒散,炒到7-8分熟,呈出备用。
3.锅子里再加点油,放入辣豆瓣酱,炒香、炒到油色红亮。加入姜末(多些)、少许蒜末。放入笋丝、木耳、2汤匙的高汤(水)、2-3汤匙酒酿(如果觉得不够甜可以再放点糖)、酱油少许、下肉丝(包括肉丝汁)、辣椒、醋一点点翻炒下,加入淀粉水、葱花(我没加,家里没了)、香油。ok完成
小诀窍
想要肉丝炒得嫩,得加入少许水,让肉吸入水分。这样即使火候把握的不好也能把肉炒得比较好吃.
主料:猪腿肉250克,嫩笋丝100克,鸡蛋1个,糖15克,醋15克,生油200克,麻油10克,味精2.5克,酱油10克,精盐5克,四川郫县豆瓣酱10克,黄酒5克,水淀粉15克,胡椒粉适量,葱花,姜末各少许。
(一)把猪腿肉切成6厘米长、宽厚各0.2厘米的丝,用酒、盐拌和均匀,放入打散的鸡蛋、生粉调上浆。另将白糖、酱油、醋、味精、水生粉调在小碗里待用。
(二)锅烧到六成热时,放入生油,随即倒入肉丝炒散,视断血端锅倒入漏勺,沥去油。锅底留余油,下葱花、姜末、豆瓣酱一起煸出香味后,放笋丝,同时将肉丝入锅炒和,随即将小碗调料倒入锅内,迅速翻炒几下,加味精后勾上薄芡,撒上胡椒粉,浇上麻油起锅装盆。
版本二:
菜谱配料:
猪肉350克。水发兰片100克、水发木耳25克、泡辣椒15克。盐3克、姜5克、蒜10克、葱10克、素油50克、酱油10克、醋5克、糖15克、味精1克、豆粉25克。
制作过程:
猪肉切成长约7厘米、0.3厘米粗的丝,加盐、水豆粉拌匀。兰片、木耳洗净,切成丝,泡红辣椒剁细;姜、蒜切细末,葱切成花。用酱油。醋、白糖、味精、水豆粉、鲜汤,盐兑成芡汁。炒锅置旺火上,放油烧热(约180℃),下肉丝炒散,力口泡辣椒、姜、蒜末炒出香味,再放。木耳、兰片丝、葱花炒匀,烹入芡汁,迅速翻簸起锅装盘即成。
版本三:
用料:瘦猪肉200克,四川泡辣椒20克(豆瓣酱、辣椒糊均可),白糖20克,醋15克,酱油15克,精盐1.5克(分两次用),味精1克,料酒15克,水淀粉25克(分两次用),黄瓜100克(玉兰片、柿子椒等均可),水发木耳50克,葱姜蒜共50克,花生油50克。
